How does the body control water levels?
I know it is something to do with the ADH and the kidneys, but I am very confused about how the body actually controls the level of water. Help!

The intake of body water happens in the following ways:-
(1) Drinking of water and beverages.
(2) Eating of foods that contain varying amounts of water.
(3) Oxidation of foods which we take.
The body water also include the water present in the cell cytoplasm which is the major constituent of any living cell. While free water content is largely regulated by kidney. The release of water happens in the following ways:-
(1) Urinary excretion.
(2) Fecal excretion.
(3) Pulmonary excretion.
(4) Excretion through skin as sweat by perspiration.
(5) To some extent through mucus and vomiting.
The excretion of water as urine is associated with urea cycle as well as function of hormones (as you mentioned in the question). Even in a no-water-intake situation body extracts some water for removal of unwanted waste materials (500 mL/day). The water excretion is largely controlled by vasopressin of the posterior pituitary gland. The secretion of this hormone is controlled by the osmotic pressure of the plasma and the later is controlled by the Na+ and K+ ions concentration in the blood. Water goes into the colecting ducts of kidney and distal tubules. The wastes are concentrated to certain degree and the major portion of water is excreted. It should be remembered than a higher Na+ ion concentration leads to greater excretion and a dehydrating stomach leads to cellular protein oxidation during this process of excretion.

by osmoregulation. when blood osmotic pressure high(low level of water in body) the changes will detected by osmoreceptor(hypothalamus). then it will send nerve impulse to the pituitary gland and this will stimulate pituitary gland to secrete MORE ADH. the ADH will covey into the kidney via blood circulatory system.
At kidney, the ADH will cause the collecting duct become MORE permeable to water and this will cause the MORE reabsorbtion of water at collecting duct.
when more water is reabsorb, the blood osmotic pressure will decrease and return to normal level.
that why when you lack drinking of plain water your urine volume will decrease and urine become more concentrated because high reabsorbtion of water at kidney.
